Sodium diacetate is produced by reacting sodium carbonate or sodium hydroxide with acetic acid under controlled conditions.

1️⃣ Reaction Formation: Sodium carbonate (Na₂CO₃) reacts with acetic acid (CH₃COOH) to form sodium diacetate.
2️⃣ Crystallization: The solution is evaporated to obtain solid sodium diacetate.
